Achinga payaru Mezhukkupuratti / Long beans Stir-Fry




Ingredients:

    Long beans / Achinga payaru  - 1/2 kg
    Green chilly  - 2-3 nos
    Sliced Shallot - 1/4 cup
    Sliced coconut - 1/4 cup
    Dry red chilly - 2 nos
    Turmeric powder -1/4 tsp
    Oil -2 tbsp
    Mustard - 1/2 tsp
    Salt to taste
    curry leaves.

Clean and cutthe Long beans into small pieces(1 inch).Cook the beans with salt,pinch of tumeric powder,green chilly and sliced coconut.Crush the dry red chilly and keep aside. Heat the oil in a pan and add Mustard,curry leaves,shallot,crushed dry red chilly  and saute well.Pour the cooked beans into it and mix it well.Close the pan with a lid and allow it to cook for 2 mins.Open the lid and dry it untill the water evaporate .
